Ingredients:
½ cup Unsalted butter
½ cup White sugar
2 Eggs
1 tsp Vanilla essence
¾ cup Flour
1 Lemon rind
2 Tbsp Milk
½ cup Daily Apple Sweet Rosselle Chips
Procedure:
- Pre-heat oven to 375ºF.
- Line 10 muffin tins with paper cases.
- Cream the butter and sugar together in a bowl until pale.
- Beat in the eggs a little at time and stir in the vanilla essence.
- Fold in the flour using a wooden spoon and add the lemon rind and the milk.
- Spoon the mixture into the paper cases until they are half full. Place the Daily Apple Sweet Roselle Chips in the center of every case and cover with more batter until ¾ full.
- Bake in the oven for 15 minutes or until golden brown on top.
- Set aside to cool for 10 minutes then remove from the tin and cool on a wire rack.
